Hobo Casserole Recipe

Ingredients
  

  • 1 lb lean ground beef
  • ½ cup yellow onion diced
  • 2 garlic cloves minced
  • 2 tbsp allpurpose flour
  • 1 cup beef broth
  • 1 tbsp dried minced onion flakes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 cups shredded cheddar cheese divided
  • 1 cup sour cream
  • 3 cups russet potatoes diced (~3 potatoes)
  • 1 cup carrots diced
  • 1 tbsp dried parsley optional, for garnish

Instructions
 

  • Step 1: Cook the Beef Mixture
  • Preheat your oven to 400°F (200°C).
  • In a large skillet over medium heat, cook ground beef, diced onions, and minced garlic for 57 minutes or until the meat is browned and the onions are soft.
  • Stir in flour and cook for 1 minute, stirring continuously.
  • Step 2: Create the Sauce
  • Pour in beef broth, minced onion flakes, onion powder, garlic powder, Worcestershire sauce, salt, and black pepper.
  • Stir well and let the mixture simmer for 12 minutes, allowing the flavors to meld.
  • Add 1 cup shredded cheddar cheese and sour cream, stirring until smooth and combined.
  • Step 3: Assemble the Casserole
  • Transfer the beef mixture into a greased 9x13” baking dish.
  • Stir in diced potatoes and carrots, making sure everything is evenly mixed.
  • Top with the remaining 2 cups of shredded cheddar cheese.
  • Step 4: Bake
  • Cover the baking dish with aluminum foil and bake for 3035 minutes, or until the potatoes and carrots are forktender.
  • Remove the foil and bake for 5 more minutes, allowing the cheese to melt and bubble.
  • Step 5: Serve & Enjoy
  • Sprinkle with dried parsley before serving.
  • Serve hot with crusty bread or a simple green salad.
