Step 1: Cook the Beef
In a large skillet, heat 2 teaspoons of oil over medium-high heat.
Add the chopped beef, season with salt and pepper, and cook until fully done.
Remove the beef from the skillet and cover to keep warm.
Step 2: Sauté the Vegetables
In the same skillet, add another teaspoon of oil if needed.
Add the chopped onion, red and green peppers, and mushrooms.
Sauté until the vegetables are soft and tender.
Step 3: Combine Meat and Garlic
Return the cooked beef to the skillet with the minced garlic.
Stir and cook for another minute until the meat is reheated and garlic is fragrant.
Step 4: Assemble the Quesadillas
Spread mayonnaise on one side of each tortilla (if using).
Spoon the filling onto one half of each tortilla.
Top with sliced provolone cheese. Fold the tortillas in half over the filling.
Step 5: Cook the Quesadillas
Heat a clean skillet over medium heat. Add a little oil for crispiness if desired.
Place quesadilla in the skillet and cook until golden brown and cheese is melted, flipping once.
Remove from skillet, slice, and serve hot.
