Instructions
 

  • Step 1: Cook the Beef
  • In a large skillet, heat 2 teaspoons of oil over medium-high heat.
  • Add the chopped beef, season with salt and pepper, and cook until fully done.
  • Remove the beef from the skillet and cover to keep warm.
  • Step 2: Sauté the Vegetables
  • In the same skillet, add another teaspoon of oil if needed.
  • Add the chopped onion, red and green peppers, and mushrooms.
  • Sauté until the vegetables are soft and tender.
  • Step 3: Combine Meat and Garlic
  • Return the cooked beef to the skillet with the minced garlic.
  • Stir and cook for another minute until the meat is reheated and garlic is fragrant.
  • Step 4: Assemble the Quesadillas
  • Spread mayonnaise on one side of each tortilla (if using).
  • Spoon the filling onto one half of each tortilla.
  • Top with sliced provolone cheese. Fold the tortillas in half over the filling.
  • Step 5: Cook the Quesadillas
  • Heat a clean skillet over medium heat. Add a little oil for crispiness if desired.
  • Place quesadilla in the skillet and cook until golden brown and cheese is melted, flipping once.
  • Remove from skillet, slice, and serve hot.
  • Calories: ~540 kcal per quesadilla (based on 2 large quesadillas)

Notes

For best texture, use a non-stick skillet and cook until each side is deeply golden.
Avoid aged provolone cheese, as it doesn’t melt well.
Add extra cheese or sautéed jalapeños for a spicier twist.
